Job Description:
JOB SUMMARY
We are looking for a Chef of Japanese Cuisine to prepare authentic dishes, create menus, supervise staff, and ensure high standards of quality, hygiene, and kitchen operations.
KEY ACCOUNTABILITIES
- Prepare and present high-quality Japanese dishes with consistency and attention to detail.
- Design and update Japanese menus, including seasonal and specialty items.
- Supervise and train junior kitchen staff in Japanese culinary techniques.
- Ensure compliance with hygiene, health, and safety regulations in the kitchen.
- Work closely with the Executive Chef and F&B team to align with the casino’s standards and customer expectations.
- Monitor food stock and place orders to maintain inventory levels.
- Ensure portion control and minimize food waste.
- Manage kitchen operations during shifts, especially in high-traffic hours or VIP service times.
- Maintain kitchen cleanliness and equipment maintenance standards.
- Handle guest feedback with professionalism and ensure continuous improvement.
JOB REQUIREMENTS
(Education, Qualification/Skills/Behavior, and Related Experiences.)
- Proven experience as a Japanese Chef, preferably in a luxury hotel, casino, or fine-dining restaurant.
- Expertise in Japanese food cooking.
- Must be able to speak both English & Chinese.
- A culinary degree or Japanese cooking certification is an advantage.
- Strong leadership and kitchen management skills.
- Excellent knowledge of food safety and sanitation standards.
- Ability to work in a fast-paced, high-pressure environment.
- Willingness to work flexible shifts, weekends, and holidays.
- Good communication skills in English; knowledge of Japanese is a plus.
